Brazilian Rice

*You can substitute any of these ingredients according to your taste

Ingredients

5 cups of rice (I prefer brown rice, but it’s up to you)

½ onion chopped 1 cup dried plums chopped (This will make the rice sweet – you can omit or adjust depending on taste)

15 oz can of diced tomatoes (drained)

15 oz can of green peas (drained) 15 oz can of hearts of palm (drained and chopped)

1 cup of chopped ham

1 cup of carrots

1 cup chopped green apple

½ cup sliced green olives

Oil

2 cups mozzarella cheese

Directions

First Step – Over medium heat, sauté ½ chopped onion in a little oil with three generous pinches of salt. Cook until translucent. Cook the rice according to package directions in mixture.

Second Step – Melt 1 Tablespoon of butter in stock pot over medium heat. Sauté carrots, raisins, plums and apples in butter. Cook over medium heat until mixture is golden brown and begins to soften. Remove from heat and divide mixture in half in pan. (similar to pan image)

Third Step – In a large sauté pan, add a little bit of oil and a handful of chopped onion. Let onion cook until translucent. Add peas, ham, heart of palms, green olives and tomatoes. Add finely chopped parsley if desired. Sautee in pan for a few minutes, but do not cook too long.

Remove from heat and divide mixture in half in pan. (see image)

In a deep casserole dish. First cover the bottom of the pan with a layer of rice.

Then add the apple and fruit mixture,

then a layer of tomato mixture.

Continue to repeat finishing with rice and topping with the mozzarella cheese.

Bake at 350 until cheese melts and just gets a little color.
