Egg Muffins! Yum!

Egg muffins

Ingredients:
Dozen eggs
Tomatoes
1 cup of sliced ham
1 cup of shredded cheese of your choice
salt and pepper

Directions:
Pre-heat oven to 375 degrees
Greece muffin tin
Beat eggs, add tomatoes, ham, salt and pepper
Pour into each muffin cup to almost top
Cook to 20-25 minutes to golden brown

Egg muffin with bread:

Ingredients:
Six eggs
Four slices of wheat bread
Tomatoes
1 cup of  sliced ham
1 cup of shredded cheese of your choice
salt and pepper

Directions:

Pre-heat oven to 375 degrees
Greece muffin tin
Beat eggs, add tomatoes, ham, bread and, salt, and pepper
Pour into each muffin cup to almost top
Cook to 20-25 minutes to golden brown

Camila’s Healthy Option: Chicken Wrap

Ingredients:
(1) Ezekiel sprouted grain tortilla or soy wrappers
1/2 Avocado sliced (ripe)
2 Tablespoons of black beans
1 half a medium size tomato sliced
1/2 cooked chicken breast sliced (Turkey Deli Meat can be substituted)
Pinch of cilantro or to taste

Place wrap on plate, scatter the avocado pieces on the wrap. Using the back of a fork, mash the avocado on the wrap. Sprinkle the black beans on top of the avocado and spread to cover. Place chicken slices on top of the beans then add the sliced tomato. Top with a pinch of cilantro or more to taste. Gently roll the wrap and slice on the diagonal. Enjoy this tasty and healthy option.

Ingredients

  1. 1 1/2 cups uncooked Oatmeal
  2. 1 large Banana
  3. 1/2 cup Peanut Butter

Instructions

    1. Preheat your oven to 350 degrees.
    2. Using a food processor or blender, grind your oats until they’re powder.
    3. In a bowl, beat together the banana and peanut butter until smooth. A few small chunks of banana here and there is ok. The dough should stick together, but shouldn’t be sticky.
    4. Reserve about a tablespoon of ground oatmeal and pour the rest into the banana peanut butter mixture and mix until combined.
    5. Dust your surface with the reserved ground oatmeal and roll your dough to about a 1/4 inch thickness.
    6. Cut into desired shapes and place on a parchment paper lined cookie sheet.
    7. Bake treats for approximately 15 minutes, or until the edges start to brown.
    8. Cool completely before storing in an airtight container for up to a week.

 

Fun DIY crayon art project!

Crayon Project for Kids

DIY Crayon Art: Hot glue crayons wrapped or unwrapped to top of the canvas you’re using.
If you want to unwrap put crayons in bowl of water and wrappers will come right off. Dry with paper towel
Blow dry the crayons until they drip.
You can glue broken crayons in center for a 3-D illusions

I admire that you are able to balance your own career, your beautiful family and still support your husband in his busy career. As a working mom — I’m always trying to learn new ways to find the balance. One of the hardest parts is finding time to make healthy meals — thanks for the inspirations. 🙂 That Star Wars cake is pretty cool!
