Curly Green Salad with Marinated Radishes

Serves 2

1 shallot (finely chopped)
3 Radishes (thinly sliced)
2 Tablespoons of Crème Fraiche (You can substitute with sour cream)
1 lemon (juiced)
1 small head of curly green lettuce (cleaned and chopped)
Salt and pepper
2 Tablespoons of green onion finely chopped (green part only)
Shaved apple to taste
In a bowl, combine the chopped shallot, crème fraiche and lemon juice, mix to incorporate. Chill and marinate for 30 minutes or longer. As a time saver, you can add your cleaned chopped lettuce on top of the radish mixture. When you’re ready to serve, season the salad with salt and pepper, toss. Garnish top of salad with shaved apple and the chopped green onion.

    I love all the food you cook! It’s healthy yet good to eat and the kids love it! I was born in Nicaragua my mother is from Lima Peru, and my dad was Swiss Italian. I definitely like a lot of flavourful food and different variety so I cannot wait for your pot roast recipe! 🙂
