This Almond Butter Chocolate Fudge recipe from our awesome reader, Paleo Running Momma features all of these super tasty ingredients in one … AND it’s paleo, refined sugar free, gluten free, dairy free and perfectly rich in flavor.
Chances are you’ll be grabbing one delectable bite after the next when those chocolate cravings strike. Just be sure to store your fudge in the fridge or freezer so it doesn’t melt, and that your chocolate chips are free of processed ingredients and sugars. We always prefer to go with the vegan kind! Paleo Running Momma personally uses Enjoy Life Dark Chocolate Morsels.
Paleo Almond Butter Chocolate Fudge
Bottom Chocolate Layer
- 3/4 cups dark chocolate chips/morsels
- 1/2 cup smooth almond butter unsweetened
- 1/2 tbsp raw honey
- 1/4 cup organic coconut oil
- 1/2 tsp pure vanilla extract
Top Almond Layer
- 1 1/2 cups smooth almond butter unsweetened
- 1/2 cup organic coconut oil melted and cooled (not hot)
- 2 tbsp raw honey
- 1/4 tsp fine grain sea salt
Mix the bottom chocolate layer first. Melt the chocolate chips first either in small increments in the microwave or over low heat in a saucepan. Fold in coconut oil, almond butter, honey and vanilla.
Line an 8 x 8 inch baking pan with parchment paper and spread the melted chocolate mixture over the bottom of the pan. Chill in the refrigerator while you make the top layer until solid.
Mix together all the top almond layer ingredients in a large bowl with a hand mixer. (You can use a whisk by hand if you don't have one!)
Pour the almond butter mixture on top of the chilled chocolate layer, spreading the mixture evenly.
Cover the fudge and chill in freezer for about an hour until firm and enjoy. We love storing this sweet treat in our freezer when the mood strikes!
