A fun and festive appetizer idea is this Avocado Mousse!
4 cups mashed avocado (5 or 6 ripe avocados)
1 teaspoon salt
2 envelopes unflavored gelatin
½ cup cold water
1 tablespoon lemon juice
2 tablespoons grated onion
¾ cup mayonnaise
½ cup heavy whipping cream (whipped)
1 pound of cold, cooked shrimp that has been marinated in lemon juice, salt and pepper
In a large bowl, peel and mash avocados and add salt. Mix the gelatin in cold water then heat in a small pot or in a microwave until dissolved. Add gelatin, lemon juice, and grated onion into mashed avocados. Refrigerate mixture until it begins to congeal, fold in the mayonnaise and whipped cream. Season to taste with salt and pepper. You can place mixture into a heart shapped cake pan or into a 5-cup ring mold. Chill mixture in desired mold for several hours. Unmold on a bed of shredded lettuce and garnish with shrimp.
Tip: In a zip top plastic bag, add shrimp, juice from one lemon, a pinch of salt and a half a pinch of pepper. Zip plastic bag closed and keep on refrigerator until you’re ready to unmold avocado mouse and serve.
