Two ST. PATRICK’S DAY RECIPES

Growing up in Brazil, St. Patrick’s Day isn’t celebrated like it is here in the states, but for me it’s become a fun holiday to celebrate with my family! There are so many drinks, foods and decorations around this special day. Today, I put together some easy ways to celebrate the holiday even if you’re tight on time. I included a craft and some easy “green” dishes to make tomorrow a little more festive.

Avocado Cucumber Salad

Serves 2 large salads or 4 small side salads

Ingredients:
3 large avocados, pitted and chopped
1 large English cucumber – seeded and chopped
Juice of 1 large lime
½ cup crumbled feta cheese
1 tablespoon chopped cilantro
Salt and pepper
2 Serrano or Jalapeño peppers thinly sliced
Mixed greens for plating
Wedges of limes for serving

In a mixing bowl combine the cucumber, avocado, lime juice, feta and cilantro. Gently stir to combine and season to taste with salt and pepper. Serve on a bed of mixed greens. Top with desired amount of Serrano or Jalapeno peppers and serve with a wedge of lime.

Shamrock Cucumber Sandwiches

Serves 4

Ingredients:
2 English muffins split or 4 slices of bread cut into shamrock shape
Tuna salad, chicken salad or hummus for spread on toast
12 slices of cucumber
4 thin slices of green pepper
Fresh Cilantro

Split English muffins and get four halves. Cut each half into a Shamrock design, making three leaves and lightly toast. Spread desired amount of tuna salad, chicken salad or hummus on top of each half. Place three slices of cucumber on each leaf and add the thin slice of green pepper to create the stem and add a small piece of cilantro in middle to complete your Shamrock.
