Easy Chicken Chili Soup

Ingredients

  • 1 large onion, chopped
  • 3 tbsp. olive oil
  • 2 cups chicken broth
  • 1 rotisserie chicken, meat removed and cut up
  • 2 15 oz. cans cannellini beans, rinsed and drained
  • 1 11 oz. can white corn, drained
  • 2 4 oz. cans chopped green chiles
  • 2 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. hot pepper sauce
  • Optional Toppings: sliced jalapeno, chopped red onion, chopped cilantro, tortilla strips, cheese, and fresh lime wheel.

Instructions

  • In a Dutch oven, sauté onion in olive oil until translucent. Add chicken broth and bring to a boil.
  • Add the chicken, beans, corn, green chile, cumin, chili powder, salt, pepper, and hot pepper sauce. Cook on a slow simmer for 25-30 minutes.
  • If desired, add toppings of your choice.
