Pumpkin Turkey Chili

Ingredients

  • 1 large yellow onion, diced          
  • 1 medium red bell pepper, diced
  • 3/4 tsp garlic powder
  • 2 tbsp chili powder
  • 1 tbsp cocoa powder
  • 1 tbsp pumpkin pie spice
  • 2 1/2 tsp ground cumin
  • 1/2 tsp ground black pepper
  • 1/2 tsp cayenne pepper (optional)
  • 1 lb at least 90% lean ground turkey
  • 15 oz can of white beans, drained and rinsed                 
  • 28 oz can of diced tomatoes with liquid 
  • 1/4 cup tomato paste   
  • 14 oz can of pumpkin puree      
  • 1 cup reduced sodium chicken/vegetable broth
  • 4 cup baby spinach
  • Cooked brown or white rice for serving (optional)         
Optional toppings:
  • fresh sliced jalapeno
  • avocado
  • sour cream
  • cilantro
  • salsa

Instructions

  • Coat a large pot with oil spray and warm over medium-high heat. Add the onion and bell pepper and sauté, stirring occasionally, for approx. 7 minutes. Stir in the garlic powder, cook until fragrant, approx. 30seconds.
  • In a small bowl measure out all the dry spices:  chili powder, cocoa powder, pumpkin pie spice, cumin, black pepper, and opt. cayenne pepper, set aside
  • Add the ground turkey to the pot. Use a spatula to break up the meat as it cooks. Continue to sauté for approx. 6-7 minutes, or until fully cooked. Add the beans, diced tomatoes, tomato paste, pumpkin puree, broth, and the small bowl of dry spices and stir.  Reduce heat and simmer for 20-30 minutes, stirring occasionally.
  • Right before serving, add the spinach and mix through until the leaves wilt. Season with kosher salt (about 1 tsp). Add desired optional toppings such as avocado, sour cream, chopped cilantro, fresh sliced jalapeno peppers, or your favorite salsa.
  • If desired, serve over rice.
