Coat a large pot with oil spray and warm over medium-high heat. Add the onion and bell pepper and sauté, stirring occasionally, for approx. 7 minutes. Stir in the garlic powder, cook until fragrant, approx. 30seconds.
In a small bowl measure out all the dry spices: chili powder, cocoa powder, pumpkin pie spice, cumin, black pepper, and opt. cayenne pepper, set aside
Add the ground turkey to the pot. Use a spatula to break up the meat as it cooks. Continue to sauté for approx. 6-7 minutes, or until fully cooked. Add the beans, diced tomatoes, tomato paste, pumpkin puree, broth, and the small bowl of dry spices and stir. Reduce heat and simmer for 20-30 minutes, stirring occasionally.
Right before serving, add the spinach and mix through until the leaves wilt. Season with kosher salt (about 1 tsp). Add desired optional toppings such as avocado, sour cream, chopped cilantro, fresh sliced jalapeno peppers, or your favorite salsa.
If desired, serve over rice.
