Strawberry Avocado Salad with Grilled Chicken and Champagne Vinaigrette

Salad
16ozbagof baby spinach – washed and patted dry
2cupsstrawberries, quartered
1avocado thinly sliced
4ozfeta cheese, crumbled
1/4cuprough cut chopped walnuts
2-4boneless chicken breasts grilled
Vinaigrette
2tbspchampagne vinegar or white balsamic vinegar
6ozextra virgin olive oil
1/2tsphoney
1/8tspsalt
1/8tspfresh ground black pepper
Instructions
To Prepare Vinaigrette
In a small bowl whisk together the champagne vinegar, olive oil, honey and sea salt and set aside.
To Prepare Salad
In the salad bowl or large platter, arrange the ingredients in layers: baby spinach on the bottom, then strawberries, avocado slices, pecans, feta, and walnuts.
Slice the grilled chicken on the side or placed over the top.
