3 Ingredient Zucchini Salad

Ingredients

  • 3 Italian squashes
  • ¼ cup pine nuts
  • goat cheese
To Season
  • 1-2 cloves garlic
  • 1 lemon, juice and zest
  • olive oil
  • salt + pepper

Instructions

  • Toast pine nuts in a skillet until golden brown. Use a mandolin (CAREFULLY) to slice zucchini into paper-thin ribbons. Sprinkle a bit of salt onto the zucchini and set aside while you prep the rest. 
  • In a bowl, grate 1-2 cloves garlic with the juice of 1 lemon and a little olive oil. Whisk together. Add in zucchini ribbons and gently toss. Crumble in some goat cheese and pine nuts. Transfer to a serving dish (leaving behind excess water and dressing). Finish off with salt and pepper and lemon zest.
