In a mixing bowl, combine peanut butter, honey, and vanilla. Mix until well combined.
Add the ½ cup of shredded coconut, the quick cooking dry oats, and mini chocolate chips. Stir well and refrigerate for one hour.
Shape the mixture into small bites, about 1” round. Roll the bites into the chopped coconut to cover.
You can serve immediately or refrigerate in a container for 7 days.
