No-Bake Coconut Peanut Butter Oat Bites

Ingredients

  • ½ cup peanut butter
  • cup honey
  • 1 tsp vanilla
  • ½ cup shredded coconut
  • 1 cup quick cooking dry oats
  • ¼ cup mini chocolate chips
Garnish
  • ¾ cup shredded coconut (pulsed on food processor)

Instructions

  • In a mixing bowl, combine peanut butter, honey, and vanilla. Mix until well combined.
  • Add the ½ cup of shredded coconut, the quick cooking dry oats, and mini chocolate chips. Stir well and refrigerate for one hour.
  • Shape the mixture into small bites, about 1” round. Roll the bites into the chopped coconut to cover.
  • You can serve immediately or refrigerate in a container for 7 days.
