Arugula Salad with Hot Smoked Salmon and Sherry-Maple Dressing

Ingredients

  • 4 oz wild arugula
  • 1 tbsp dried cranberries
  • 2 tbsp toasted pecans
  • 1 tsp toasted sesame seeds
  • 2 tsp green onion sliced thin
  • 1-2 tbsp crumbled goat cheese
  • 4 oz hot smoked salmon (flaked into medium sized chunks)
  • 1-2 oz Sherry-maple dressing (recipe below)

Instructions

  • Reserve the salmon, sesame seeds and goat cheese.
  • Toss remaining salad ingredients in 1-2 oz dressing and plate your salad.
  • Sprinkle plated salad with sesame seeds and goat cheese.
  • For a rustic presentation, arrange salmon chunks on top of salad and sides of plate.
