Roasted Carrots with Honey Garlic Butter Glaze

Ingredients

  • 2 lbs carrots, peeled and sliced into 4” inch-long sticks
  • 2 tbsp olive oil
  • 1 tsp Kosher salt
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 2 tbsp  honey
  • 1 tbsp fresh parsley, chopped

Instructions

  • Preheat oven to 375 F degrees.
  • Place peeled and sliced carrot sticks on a baking sheet. Drizzle with the olive oil, sprinkle with salt, and toss to coat.
  • Bake in the preheated oven for 45 min, turning 3-4 times while baking for even browning. 
  • While the carrots are baking, melt the butter on the cooktop in a small saucepan over low heat. 
  • Add the minced garlic to the melted butter and cook for 1-2 minutes until the garlic is fragrant but not browned. Drizzle the honey into the butter-garlic mixture and whisk over low heat. The glaze will thicken slightly. Set aside in the saucepan. 
  • Once the carrots are fully baked and tender, remove them from the oven and add them to a serving bowl. Pour the honey garlic butter glaze over the carrots and top with chopped fresh parsley.
  • Warm the saucepan with the honey garlic glaze for about a minute and then drizzle over the carrots. 
  • Serve immediately.
