Preheat oven to 375 F degrees.
Place peeled and sliced carrot sticks on a baking sheet. Drizzle with the olive oil, sprinkle with salt, and toss to coat.
Bake in the preheated oven for 45 min, turning 3-4 times while baking for even browning.
While the carrots are baking, melt the butter on the cooktop in a small saucepan over low heat.
Add the minced garlic to the melted butter and cook for 1-2 minutes until the garlic is fragrant but not browned. Drizzle the honey into the butter-garlic mixture and whisk over low heat. The glaze will thicken slightly. Set aside in the saucepan.
Once the carrots are fully baked and tender, remove them from the oven and add them to a serving bowl. Pour the honey garlic butter glaze over the carrots and top with chopped fresh parsley.
Warm the saucepan with the honey garlic glaze for about a minute and then drizzle over the carrots.
Serve immediately.
