Combine everything in a food processor, excluding the chocolate chips and coconut oil. Blend until smooth. Mix in the chocolate chips and add to the fridge for 15 mins.
Form walnut-sized balls with the dough and place on a tray lined with parchment paper. If the dough is too sticky feel free to add a little bit more flour. Then freeze the balls for 30 minutes.
Melt chocolate and coconut oil in the microwave or double boiler.
Dip each ball in melted chocolate, top with flaky salt then freeze for 10 more minutes until the chocolate hardens. Keep in the fridge.
