Easy Chicken Chili Soup

Ingredients

onion, chopped

olive oil

chicken broth

rotisserie chicken,
meat removed and cut up

15 oz. cans
cannellini beans,
rinsed and drained

11 oz. can
white corn, drained

4 oz. cans
chopped green chiles

tsp.
ground cumin

tsp.
chili powder
1/2
tsp.
salt
1/2
tsp.
pepper
1/2
tsp.
hot pepper sauce
Optional Toppings: sliced jalapeno, chopped red onion, chopped cilantro, tortilla strips, cheese, and fresh lime wheel.
Instructions
In a Dutch oven, sauté onion in olive oil until translucent. Add chicken broth and bring to a boil.
Add the chicken, beans, corn, green chile, cumin, chili powder, salt, pepper, and hot pepper sauce. Cook on a slow simmer for 25-30 minutes.
If desired, add toppings of your choice.
