Preheat oven to 400 degrees.
Using a serrated knife, slice off the pointed end of the bread loaf. Then carefully begin slicing the bread, but not all the way through. You want to leave the bottom intact so it will hold together when you go to make a circle. When finished slicing, stand the bread on its side and connect the two ends by inserting a toothpick diagonally.
Gently place the sliced and formed loaf on a baking sheet pan.
Using the back of a fork, mash the ½ bulb of peeled roasted garlic in a small mixing bowl, add the olive oil, chopped parsley, chopped basil, chopped thyme, and chopped rosemary. Using a small pastry brush, brush the top of the circular loaf with some of the olive oil herb mixture. Then delicately brush one side of each piece of bread from top to bottom. Any extra olive oil herb mixture can be added to the top of the loaf.
Sprinkle the top of the loaf with the grated cheese and bake in a 400-degree oven for approximately 10 minutes or until golden brown.
Remove from oven and serve. This bread holds its shape after baking and each delicious crunchy piece can be broken off easily with a knife or pulled.
