Chocolate Bourbon Pecan Pie

Ingredients

  • 1 9 inch pie shell
  • 1 cup white sugar
  • 1 cup light corn syrup
  • 1/2 cup butter
  • 4 eggs, beaten
  • 1/4 cup bourbon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 6 oz semisweet chocolate chips
  • 1 cup chopped pecans

Instructions

  • Preheat oven to 325 degrees F.
  • Combine the corn syrup, butter, and sugar in a saucepan and heat on low until the sugar dissolves. Let cool for a few minutes off the heat.
  • In a large bowl, combine eggs, bourbon, salt, and vanilla. Then add the corn syrup mixture to it and whisk together.
  • Add the pecans and chocolate chips to the bowl and stir it a little. Don’t mix it too much because you’ll melt the chocolate.
  • Pour mixture into the pie crust and bake until golden, about 50 minutes.
