Healthy Beet Carpaccio

Ingredients

Carpaccio:
  • 2 organic beets can use different colored beets
  • 1 cara cara orange
Garnishes:
  • arugula leaves
  • marcona almonds can use other nuts
  • crumbled feta cheese or goat cheese
  • chives, diced
  • mint, diced
  • balsamic glaze to drizzle
Dressing
  • 1/4 orange juice you can use the leftover orange from the cara cara
  • 1 tsp minced mint
  • 1 tbsp honey
  • salt and pepper

Instructions

  • Cook the beets for about 20-30 minutes. They need to be tender.
  • Remove the skin and slice into thin slices with a sharp knife. Arrange on a platter.
  • Cut the orange into wedges. Place the wedges inbetween the beet slices.
  • Mix all the ingredients for the dressing and set aside.
  • Now for the fun part! Add the arugula, feta, mint, almonds and a drizzle of balsamic glaze. Drizzle the dressing overtop and serve.
