Savory Pork Chops with Pears Skillet

Ingredients

  • 4 tbsp olive oil, divided
  • 3 pears, peeled, cored, and thinly sliced
  • 2 small (or 1 large) red onion, peeled, cut in half, and thinly sliced
  • 1 tbsp fresh thyme leaves, or 1 teaspoon dried
  • sea salt
  • fresh black pepper
  • 4.5 inch thick bone-in pork chops
  • 1/4 cup apple cider vinegar
  • 1/2 cup chicken broth

Instructions

  • Preheat oven to 400 degrees.
  • In a large oven proof skillet, such as cast iron, over medium-high heat, heat 2 tablespoons of olive oil.
  •  Add the onions and cook until translucent, about 3-4 minutes.
  • Add the onions and thyme. Cook for an additional 8-10 minutes.
  • Season with salt and pepper to taste. Remove from skillet and place in a bowl, set aside.
  • In the same skillet over medium-high heat, heat 2 tablespoons olive oil. Season the pork chops with salt and pepper on both sides then sear until golden brown, approximately 3-4 minutes per side. Remove the pork chops from the pan and set aside.
  • Deglaze the pan with the cider vinegar and add thecc hicken stock. Bring to a low boil and cook for 2 minutes.
  • Return the pork chops to the skillet, and top with the pear and onion mixture.
  • Place skillet into the oven and cook for another 10 minutes or until pork chops reach 145 degrees internal temperature. If your pork chops are thicker, it could take 15 minutes in the oven.
