Mediterranean Chickpea Salad

Ingredients

  • 3 15 oz. cans chickpeas, drained and rinsed
  • 1-1/2 cup grape tomatoes, chopped
  • 1 English cucumber, peeled and chopped
  • 1/2 cup feta cheese (leave out if you want the recipe to be dairy free)
Dressing
  • 1/4 cup olive oil
  • 1/8 cup Italian white wine vinegar
  • pinch sea salt
  • fresh dill to garnish (optional)
  • flowered chives to garnish (optional)

Instructions

  • Combine all ingredients in a bowl and mix with a spoon.
  • Prepare your dressing, then drizzle on top of the salad and toss.
  • Garnish with dill and chives.
  • Serve and enjoy!
