Superfood Dark Chocolate Cups

Ingredients

  • ¼ cup rolled oats
  • ¼ cup pepitas
  • cup chia seeds
  • ¼ cup dried apricots bits 
  • 1 tbsp coconut oil
  • 1 tsp honey
  • cup dark chocolate

Instructions

  • In a bowl, mix together all the ingredients except the dark chocolate.
  • In a small silicon muffin mold spoon the oat mixture filling each about 1/3 of the way.
  • Melt the chocolate chips in a double boiler or in the microwave, stirring every 30 seconds until melted.
  • Pour about a tablespoon of melted chocolate over the oat mixture in each liner.
  • Place in the fridge or freezer to set and when hard you can enjoy
