Add the pitted dates and dried coconut flakes to a food processor. Blend until the mixture forms a sticky, uniform dough.
Scoop small portions of the dough and shape them into cookies (about 1–2 inches in diameter).
Place the cookies on a parchment-lined baking sheet.
Bake for 12 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool completely before serving.
