5-Minute Chickpea Dip

Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 1/2 cup chopped parsley
  • 2 tbsp chive, sliced
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp cayenne (optional)
  • 1 lemon zested
  • 1 lemon juice
  • 1/3 cup olive oil
  • 1/4 cup crumbled feta cheese
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper
Garnish
  • Crumbled feta
  • Chopped parsley

Instructions

  • Combine all the ingredients in a food processor and blend until creamy. Add an extra tablespoon of olive oil and a splash of water, if needed, to reach the desired consistency. 
  • Garnish with crumbled feta and chopped parsley. 
  • Serve with pita chips and fresh vegetables.
