Kohlrabi and Mint Salad
Ingredients

green cabbage

medium
kohlrabi, peeled and grated
1
large
granny smith apple, finely julienned
1/4
small
red onion, thinly sliced
3
tbsp.
coarsely chopped mint
Dressing
2
tbsp.
lemon juice
2
tbsp.
extra virgin olive oil
2
tsp.
apple cider vinegar
Instructions
Finely shred cabbage with a mandoline and place in a bowl.
Add grated kohlrabi, apple, and onion.
Whisk together dressing ingredients and pour over the salad.
Toss to combine.
Serve with mint and an extra drizzle of olive oil.
