Kohlrabi and Mint Salad

Ingredients

  • 11-12 oz. green cabbage
  • 2 medium kohlrabi, peeled and grated
  • 1 large granny smith apple, finely julienned
  • 1/4 small red onion, thinly sliced
  • 3 tbsp. coarsely chopped mint
Dressing
  • 2 tbsp. lemon juice
  • 2 tbsp. extra virgin olive oil
  • 2 tsp. apple cider vinegar

Instructions

  • Finely shred cabbage with a mandoline and place in a bowl.
  • Add grated kohlrabi, apple, and onion.
  • Whisk together dressing ingredients and pour over the salad.
  • Toss to combine.
  • Serve with mint and an extra drizzle of olive oil.
