Salads are meant to have unique and crunchy ingredients to keep us coming back for more!
If you joined Camila + Women of Today with Sisters of Red at their Dallas event, then you probably got to try one of Camila’s go-to recipes, this Kohlrabi & Mint Salad. It’s light, fresh, and very easy to make! If you didn’t make it to their event, then definitely add this salad to your next menu. With only 5 ingredients plus a very simple and light dressing, you really can’t go wrong with adding it to any meal.
Kohlrabi and Mint Salad
Ingredients
- 11-12 oz. green cabbage
- 2 medium kohlrabi, peeled and grated
- 1 large granny smith apple, finely julienned
- 1/4 small red onion, thinly sliced
- 3 tbsp. coarsely chopped mint
- 2 tbsp. lemon juice
- 2 tbsp. extra virgin olive oil
- 2 tsp. apple cider vinegar
Instructions
- Finely shred cabbage with a mandoline and place in a bowl.
- Add grated kohlrabi, apple, and onion.
- Whisk together dressing ingredients and pour over the salad.
- Toss to combine.
- Serve with mint and an extra drizzle of olive oil.
