Preheat oven to 400 degrees F.
Combine the thinly sliced apples, sugar, 1 tbsp water, butter, and cinnamon in a medium saucepan over medium heat. Cook for 5 minutes or until apples are tender.
In a small dish, combine a teaspoon of cornstarch and a teaspoon of water. Add to the apple mixture and cook for 2 minutes or until the apple mixture begins to thicken. Remove from heat.
Add a small amount of the apple pie filling to 4x4 puff pastry. Fold over, seal with the back of a fork, and place on a sheet pan.
Brush each apple pie bite with egg wash and sprinkle a pinch of sparkling sugar (optional) over each piece.
Bake in preheated oven for 8-10 minutes or until golden brown.
Serve immediately.
**These can also be frozen and reheated in a 375 degree oven for 10 minutes.
