Preheat oven to 400 degrees Fahrenheit.
Cut each sheet of puff pastry into 3 pieces to yield a total of six pieces of puff pastry.
Leaving the skin on the apple and using a mandolin, thinly slice the apple halves.
Place the thinly sliced apples onto each piece of the puff pastry, overlapping each slice of apple. Place onto a baking sheet.
Drizzle with the herb-infused honey and bake in the oven for 10 minutes or until puff pastry is golden brown.
