Preheat oven to 350 degrees F.
Grease or use paper muffin liners to prepare the 12-hole muffin pan.
In a blender, add all the wet ingredients and blend until smooth.
Add the dry ingredients to the blender and pulse to combine. Stop the blender and gently stir and scrape the sides of the blender down. Pulse or use a medium speed to incorporate the ingredients. Repeat until the batter is combined.
Pour or spoon batter into muffin cups about ¾ to the top and bake for 15-20 minutes or until a toothpick, when inserted, comes out clean or with just crumbs. If you are using regular sized muffin cups you will have batter leftover and enough to make three additioanl muffins after your first batch is finished.
Let rest for 5 minutes and then cool on a baking rack. Serve warm or room temperature.
