Beet Parsley and Feta Salad

Ingredients

  • 2 15oz cans of whole beets, drained
  • 3 tbsp extra virgin olive oil
  • 2 heaping tablespoons parsley, chopped
  • cup Feta cheese, crumbled, divided
  • Kosher or sea salt

Instructions

  • Quarter the whole beets and place in a mixing bowl.
  • Season the beets with salt, drizzle with the olive oil, and add the chopped parsley.
  • Toss to combine. 
  • Add all but a tablespoon of the feta cheese and toss again. Taste and season with more salt if needed. 
  • Top with remaining feta and serve.
