BFY Flaxseed Chocolate Chip Muffins

Ingredients

  • 1 cup whole wheat flour 
  • ½ cup ground flaxseeds
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • ½ cup unsweetened applesauce (or mashed banana)
  • cup maple syrup (or honey)
  • ¼ cup melted coconut oil (or olive oil)
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350°F and line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, flaxseeds, baking soda, and salt.
  • In another bowl, mix eggs, applesauce, maple syrup, and melted coconut oil.
  • Combine the wet and dry ingredients, stirring until just mixed.
  • Fold in the chocolate chips.
  • Divide batter into muffin cups, filling each about ¾ full.
  • Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool before enjoying!
