Coconut Rice

Ingredients

  • 2 cups water
  • cups canned unsweetened coconut milk (about one 13.5 oz. can)
  • 1 tsp salt
  • 2 cups white or jasmine rice

Instructions

  • Add water, coconut milk, and salt to a large saucepan. Bring to a boil, then stir in rice. 
  • Cover and reduce heat to low, cook for 20 minutes. 
  • Remove from heat and let stand for 10 minutes. 
  • Remove lid and fluff rice with a fork.
