Coconut Rice
Ingredients
2
cups
water
1½
cups
canned unsweetened coconut milk (about one 13.5 oz. can)
1
tsp
salt
2
cups
white or jasmine rice
Instructions
Add water, coconut milk, and salt to a large saucepan. Bring to a boil, then stir in rice.
Cover and reduce heat to low, cook for 20 minutes.
Remove from heat and let stand for 10 minutes.
Remove lid and fluff rice with a fork.
