Crunchy Asian Chicken Salad

Ingredients

For the salad:
  • 6 cups shredded green cabbage, about 1 small head
  • 2 cups shredded red cabbage, about 1/2 small head
  • 1 large carrot, shredded 
  • 1 jalapeno pepper, thinly sliced
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped green onions + 2 tablespoons for garnish
  • ¼ cup crushed roasted peanuts + 2 tablespoons for garnish
  • cup crispy wonton strips + extra for garnish
  • 1 cup shredded rotisserie chicken 
For the dressing:
  • 2 tbsp soy sauce or tamari 
  • 4 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • 2 tsp grated fresh ginger
  • 2 tsp garlic, minced
Garnish:
  • Green onion
  • Crushed roasted peanuts
  • Wonton strips 

Instructions

  • Assemble the dressing. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated fresh ginger, and minced garlic. Set aside.
  • In a large bowl, combine the shredded cabbage, carrot, pepper, cilantro, green onions, peanuts, and wonton strips. 
  • Lightly dress the salad ingredients in a large mixing bowl. Toss until lightly coated. Add more dressing as needed to taste. 
  • Plate the salad, top with the shredded chicken, and garnish with the extra green onions, crushed peanuts, and wonton strips. Serve immediately.
