Curly Green Salad with Marinated Radishes

Ingredients

  • 1 shallot finely chopped
  • 2 tbsp of crème fraiche You can substitute with sour cream
  • 1 1/2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey
  • pinch Kosher salt
  • pinch black pepper
  • 3 radishes thinly sliced
  • 2 small heads of curly green lettuce cleaned and torn into bite-sized pieces
  • 2 tbsp green onion, thinly sliced green part only

Instructions

  • In a bowl combine the chopped shallot, crème fraiche, lemon juice, olive oil, honey, Kosher salt, and black pepper. Whisk to incorporate.
  • Add the thinly sliced radishes to the dressing mixture. Toss to combine.
  • Chill and marinate the radishes for 30 minutes or longer.
  • In a large salad bowl, add the cleaned and torn curly green lettuce.
  • Top with the marinated radishes and gently toss to combine.
  • Garnish the salad with sliced green onions and serve.
