Gluten Free Crustless Ham and Cheese Quiche

Ingredients

  • 1 tbsp avocado oil
  • ¾ cup diced yellow onion
  • ¼ cup green onions, green part sliced 
  • ¾ cup diced ham
  • 6 large eggs
  • Salt and pepper to taste
  • ¾ cup almond flour
  • ½ tsp baking powder
  • 1 cup shredded cheddar cheese, divided

Instructions

  • Preheat oven to 350°F .
  • Lightly grease a 9” pie plate or fluted quiche baking dish.
  • Heat a skillet over medium heat. Add the avocado oil and diced yellow onion. Cook until onions are soft and translucent. 
  • Add the diced ham and cook until warmed through. This will help the flavors to meld. Remove from the heat, set aside, and let cool for a few minutes. 
  • In a large mixing bowl, whisk the eggs until smooth, then season with salt and pepper.  
  • Add the onion and ham mixture to the eggs and stir to combine. 
  • Add the almond flour, baking powder, and 1/2 cup cheese. Stir until combined and then add the sliced green onion.
  • *Tip – Use a sieve to add the almond flour and baking powder to wet ingredients. This will ensure the equal distribution of the dry ingredients into the quiche. 
  • Pour the batter into the prepared pie plate or quiche dish. The batter will be thick.
  • Top with the remaining shredded cheese. 
  • Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center of the quiche.
  • Let the quiche sit for 5 minutes, slice, and serve.
