Preheat oven to 350°F .
Lightly grease a 9” pie plate or fluted quiche baking dish.
Heat a skillet over medium heat. Add the avocado oil and diced yellow onion. Cook until onions are soft and translucent.
Add the diced ham and cook until warmed through. This will help the flavors to meld. Remove from the heat, set aside, and let cool for a few minutes.
In a large mixing bowl, whisk the eggs until smooth, then season with salt and pepper.
Add the onion and ham mixture to the eggs and stir to combine.
Add the almond flour, baking powder, and 1/2 cup cheese. Stir until combined and then add the sliced green onion.
*Tip – Use a sieve to add the almond flour and baking powder to wet ingredients. This will ensure the equal distribution of the dry ingredients into the quiche.
Pour the batter into the prepared pie plate or quiche dish. The batter will be thick.
Top with the remaining shredded cheese.
Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center of the quiche.
Let the quiche sit for 5 minutes, slice, and serve.
