Gluten Free Sweet Potato Sliders

Ingredients

  • 2 Sweet potatoes (skin on), scrubbed, dried, and ends trimmed
  • Olive Oil spray 
  • ½ tsp Kosher salt
  • 1 log (4oz.) plain goat cheese, room temperature
  • ¼ cup pecans, crushed
  • ¼ cup dried cranberries
  • 2 tbsp fresh mint leaves, chopped
  • 1 tbsp maple syrup or honey

Instructions

  • Preheat oven to 375 degrees F.
  • Spray a sheet pan with olive oil.
  • Slice sweet potatoes into ¼” thick rounds. Place on a sheet pan and spray the tops of the sweet potato rounds with olive oil spray—season with Kosher salt.
  • Place in the oven and cook until fork-tender, 30 -40 minutes.
  • Remove from oven and let cool 10 minutes. 
  • Working one at a time, spread each sweet potato round with goat cheese and place it on a serving plate.
  • Sprinkle with crushed pecans, dried cranberries, and chopped mint leaves.
  • Drizzle with maple syrup or honey and serve.
