Preheat oven to 375 degrees F.
Spray a sheet pan with olive oil.
Slice sweet potatoes into ¼” thick rounds. Place on a sheet pan and spray the tops of the sweet potato rounds with olive oil spray—season with Kosher salt.
Place in the oven and cook until fork-tender, 30 -40 minutes.
Remove from oven and let cool 10 minutes.
Working one at a time, spread each sweet potato round with goat cheese and place it on a serving plate.
Sprinkle with crushed pecans, dried cranberries, and chopped mint leaves.
Drizzle with maple syrup or honey and serve.
