Slice each date lengthwise on one side to create an opening. Remove any pits if they’re still intact.
Using a small spoon or piping bag, fill each date with about a teaspoon of softened goat cheese. Don’t overfill—you want them to close neatly around the filling.
Wrap each stuffed date with half a slice of bacon, ensuring it’s snug. Secure with a toothpick.
Preheat your oven to 400°F (200°C). Arrange the dates on a parchment-lined baking sheet with the bacon seam side down. Bake for 15-20 minutes, flipping halfway, until the bacon is crispy and golden.
Let the dates cool for a few minutes. If desired, drizzle with honey and sprinkle with fresh thyme for an added layer of flavor. Serve warm.
