Cook the beets for about 20-30 minutes. They need to be tender.
Remove the skin and slice into thin slices with a sharp knife. Arrange on a platter.
Cut the orange into wedges. Place the wedges inbetween the beet slices.
Mix all the ingredients for the dressing and set aside.
Now for the fun part! Add the arugula, feta, mint, almonds and a drizzle of balsamic glaze. Drizzle the dressing overtop and serve.
