Place a small open empty jar in a skillet with 1-2 inches of water surrounding it. Pour the honey into the empty jar and heat until water begins to steam in the skillet. Do not boil.
Place the fresh thyme or rosemary into the jar and gently push the herbs down into the honey if needed.
Turn the heat off on the skillet, let the herbs sit in the honey, and steep for 10 minutes.
Carefully remove the jar from the hot water and towel dry the outside of the jar.
Cover the jar with its lid, place it in a sunny window, and allow it to sit for 1-2 days.
After the honey has sat for your desired number of days, use a fork to remove the herbs from the honey.
Keep the honey in a cool, dark place for one month.
