High-Protein Cottage Cheese Chocolate Fudge

Ingredients

  • cups full-fat cottage cheese
  • cup cocoa powder
  • 1 tbsp coconut oil (melted)
  • ¾ cup dark chocolate chips, melted in a double boiler
  • 2 tbsp honey or pure maple syrup
  • flake salt

Instructions

  • Line an 8x8 baking pan with a parchment paper sling.
  • In a blender, add the cottage cheese, cocoa powder, and melted coconut oil. Blend until smooth.
  • With the blender running on low, add the melted dark chocolate to the mixture. Blend until combined.
  • Pour into an 8x8 parchment-lined pan.
  • Freeze for 2 hours, cut into desired size pieces, and sprinkle with flake salt.
  • If serving immediately, let pieces rest at room temperature for 10-15 minutes and serve.
  • Return any leftover fudge to the freezer.
