Divide the cream cheese evenly among the flour tortillas, spreading the cream cheese in a thin layer covering the tortillas.
Add 1 tablespoon of cranberry sauce per tortilla and spread evenly.
Sprinkle the cranberries over the cream cheese mixture.
Add thin layers of turkey and spinach leaves on top of the cranberries.
Roll up the tortillas as tightly as you can.
Tightly wrap the rolls in parchement paper or plastic wrap. Place them in the refrigerator for a minimum of 6 hours or up to 1 day. This will allow the flavors to meld and the cream cheese to firm up.
Remove the plastic wrap. Trim the pointed ends (save for snacking) and slice each roll into approximately 8 pieces, making atotalof 32 pinwheels bites.
Optional: Arrange the pinwheels on a large platter in the shape of a Christmas tree and trim with fresh rosemary.
