Homemade Granola

Ingredients

  • 5 cups rolled old fashioned oats
  • cup melted coconut oil
  • ½ cup honey
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ¼ cup coconut sugar
  • ¼ cup dried cranberries
  • ¼ cup dried coconut
  • ½ cup chopped nuts (we prefer a mix of cashews, almonds or pecans)
  • ½ tsp ground cinnamon

Instructions

  • Preheat oven to 300°F. Line or grease a baking sheet.
  • Combine all the wet ingredients in a large mixing bowl. Add cinnamon and salt. 
  • Fold in the dry ingredients and stir till combined.
  • Spread the granola mixture out evenly onto a greased baking sheet.
  • Bake for 7 minutes. Remove from oven and stir. Put it back in the oven for 7-10 more minutes or until it reaches the desired crunchiness. It will harden more as it cools, so be careful not to burn. 
  • Remove from oven, stir, and let cool.
  • Store in an airtight container
