In a large bowl, add the packet of instant yeast, 1 cup of flour, sugar, and salt, then the extra virgin olive oil and warm water. Using a spatula, stir well to combine the ingredients.
Gradually add another 1 cup of flour. The dough should begin to pull away from the sides of the bowl and form a soft, slightly sticky ball.
If the dough is too sticky, add the additional flour to form a soft dough ball. More flour might be needed. Use your judgment until you have a nice dough ball that is slightly sticky.
In another large bowl, drizzle about one tablespoon of extra virgin olive oil. Place the pizza dough in the bowl and flip to coat both sides with olive oil. Form a ball and cover with plastic wrap.
Let the dough rise at room temperature for about 30 minutes or until doubled in size.
After the dough has risen, it can be baked or frozen at this point.
