Kale Caesar Salad with Chickpea Croutons

Ingredients

  • 2 bunches of kale 
  • ½ cup Caper Flower Vegan Caesar Dressing (recipe follows)
  • ½ cup Chickpea Croutons (recipe follows)
Optional toppings
  • 1 tsp nutritional yeast, for sprinkling
  • ½ cup roughly chopped kimchi
Caper Flower Vegan Caesar Dressing
  • 3 tbsp lemon juice (from about 2 lemons)
  • tbsp Dijon mustard
  • 3 tbsp nutritional yeast
  • ¾ cups vegan mayonnaise
  • 1 large garlic clove, crushed
  • tbsp drained capers
  • tbsp tamari or soy sauce
  • ½ tbsp pure maple syrup
  • 3 tbsp olive oil
  • ½ tsp distilled or white wine vinegar
Chickpea Croutons
  • 1 15 oz can chickpeas, rinsed, drained, and thoroughly dried
  • 2 tbsp olive oil
  • 2 tbsp Bae’s Spice Blend (recipe follows)
  • Pinch of kosher salt and freshly ground black pepper to taste
Bae's Spice Blend
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • ½ tbsp chili powder
  • 2 tsp paprika, sweet or smoked
  • 2 tsp ground turmeric
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • ½ tsp dried thyme
  • ¼ tsp freshly ground black pepper
  • ¼ tsp kosher salt
