Mayo-less Slaw with Pepitas and Toasted Cumin Seed Dressing

Ingredients

Slaw mix
  • 4 cups green cabbage thin slice (sliced very thin on mandolin)
  • ½ cup cilantro (rough chop)
  • ¼ cup mint leaf (rough chop)
  • ¼ cup pumpkin seeds (toasted)
  • 2 tbsp scallions (sliced thin)
  • 2 Pinches of salt
Toasted Cumin Seed Dressing
  • 1 tsp cumin seed (toasted)
  • ½ tsp dried coriander powder
  • 1 tsp shallot, fine mince
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 2 tsp lime juice
  • 1-2 tsp champagne vinegar
  • 2 tsp agave
  • 1 tsp salt
  • Cracked pepper to taste

Instructions

  • Add all slaw mix ingredients to a large mixing bowl. Sprinkle with a pinch of salt and mix. Let stand for 5 minutes in the fridge.
  • Add dressing ingredients to a bowl and stir well.
  • Add 2- 3oz of dressing to slaw mix.
  • Mix well and serve.
