Mayo-less Slaw with Pepitas and Toasted Cumin Seed Dressing
Ingredients
Slaw mix

cups
green cabbage thin slice (sliced very thin on mandolin)

cup
cilantro (rough chop)

mint leaf (rough chop)
¼
cup
pumpkin seeds (toasted)

tbsp
scallions (sliced thin)

Pinches of salt
Toasted Cumin Seed Dressing
1
tsp
cumin seed (toasted)
½
tsp
dried coriander powder
1
tsp
shallot, fine mince
2
tbsp
apple cider vinegar
2
tbsp
olive oil
2
tsp
lime juice
1-2
tsp
champagne vinegar
2
tsp
agave
1
tsp
salt
Cracked pepper to taste
Instructions
Add all slaw mix ingredients to a large mixing bowl. Sprinkle with a pinch of salt and mix. Let stand for 5 minutes in the fridge.
Add dressing ingredients to a bowl and stir well.
Add 2- 3oz of dressing to slaw mix.
Mix well and serve.
