In a small food processor or a jar, combine all the dressing ingredients and blend or shake until well incorporated.
In a mixing bowl, combine the spring mix and arugula, use a couple of tablespoons of dressing, and toss to lightly coat. Set aside. Reserve the balance if you want to drizzle extra over the ingredients.
Place the two slices of your favorite crusty bread on a broiler pan, and top each with two slices of your favorite Brie cheese. Broil until cheese is melted and bubbly.
Plate the dressed mixed greens on two plates and spoon the sliced grape tomatoes on the side of each plate.
Top each salad with slices of bread and melted Brie, then lightly drizzle honey over the Brie.
Garnish with finely chopped parsley and serve immediately.
