No Mayo Chopped Chicken Sandwich

Ingredients

  • 1 grilled boneless skinless chicken breast (rotisserie chicken works, too)
  • 1 ripe avocado
  • 2 cooked strips of bacon
  • Kosher salt
  • Pepper
  • 4 slices of your favorite bread
Garnish
  • Sliced jalapeno (optional)
  • Cooked Peppers and Onions (optional) 

Instructions

  • Place the grilled chicken breast on a cutting board. 
  • Using a chef’s knife, roughly chop the chicken breast into small bite-sized pieces. 
  • Add the pitted avocado and two slices of bacon to the chopped chicken.
  • Using the knife, chop and press the avocado into the chicken and bacon. 
  • Fold the mixture together until combined—season with salt and pepper. 
  • Divide the mixture in half to make two sandwiches.
  • Top with sliced jalapenos or cooked peppers and onions.
  • Serve immediately.
