Place the grilled chicken breast on a cutting board.
Using a chef’s knife, roughly chop the chicken breast into small bite-sized pieces.
Add the pitted avocado and two slices of bacon to the chopped chicken.
Using the knife, chop and press the avocado into the chicken and bacon.
Fold the mixture together until combined—season with salt and pepper.
Divide the mixture in half to make two sandwiches.
Top with sliced jalapenos or cooked peppers and onions.
Serve immediately.
