In mixing bowl add the cocoa powder and gently whisk, this will help to smooth any lumps in the cocoa powder.
Add the maple syrup, cinnamon, vanilla extract, and pinch of salt. Gently whisk to combine all ingredients.
Add ½ cup of the almond milk at a time to the chocolate mixture. Gently whisk to combine while you are adding the almond milk.
Add the chia seeds and gently whisk to combine.
Refrigerate the pudding. After about one hour, stir the pudding and return to the refrigerator.
The pudding can rest overnight or a minimum of 5 hours until it has a pudding consistency.
Top with your favorite whipped topping and serve.
