Peach Summer Salad

Ingredients

Dressing
  • ½ cup extra virgin olive oil
  • 2 tbsp white balsamic vinegar
  • 1 tbsp cider vinegar
  • 2 tsp maple syrup
  • 2 tsp shallot, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, finely chopped
  • ¼ cup chopped fresh basil
  • Pinch of Kosher salt
Salad
  • 2 cups multi-colored grape tomatoes, sliced in half
  • 4 ripe peaches, peeled, pitted, and sliced into wedges
  • 2 balls of burrata, at room temperature
Garnish
  • Fresh basil leaves

Instructions

  • Combine all the dressing ingredients in a jar or small bowl, shake or whisk together, and set aside. 
  • In a serving bowl, add the sliced grape tomatoes and peach wedges. Use 1/2 of the dressing and pour over the sliced tomates and peaches. Gently toss to combine.
  • Top the tomatoes and peaches with burrata and gently pull the burrata apart with two forks.
  • Spoon desired amount of extra dressing over the pulled burrata.
  • Garnish with fresh basil and serve immediately.
