Pulled Pork Tacos

Ingredients

  • 1 cup prepared pulled pork 
  • 2 tbsp olive oil
  • 1 large, red, or sweet yellow onion, peeled and thinly sliced
  • 2 bell peppers, seeded and thinly sliced
  • Kosher salt
  • Black pepper
  • 1 cup shredded cheddar cheese
  • 12 6” tortillas

  • Salsa
  • Avocado slices

Instructions

  • In a skillet over medium heat, add the olive oil and thinly sliced onions. Sauté until onions are translucent. 
  • Add the thinly sliced bell peppers and cook until soft. Season with Kosher salt and black pepper and set aside.  
  • Warm the prepared pulled pork, then transfer it to a serving dish.
  • Warm or slightly char the soft tortillas and place them in a serving dish.
  • To assemble, place the warmed tortilla shell on a plate, top with the desired amount of pulled pork, then add the sauteed peppers and onions, and finish with a little shredded cheese.
  • Additional topping suggestions include diced avocado and your favorite salsa (We used our Easiest Salsa recipe).
