In a skillet over medium heat, add the olive oil and thinly sliced onions. Sauté until onions are translucent.
Add the thinly sliced bell peppers and cook until soft. Season with Kosher salt and black pepper and set aside.
Warm the prepared pulled pork, then transfer it to a serving dish.
Warm or slightly char the soft tortillas and place them in a serving dish.
To assemble, place the warmed tortilla shell on a plate, top with the desired amount of pulled pork, then add the sauteed peppers and onions, and finish with a little shredded cheese.
