Preheat oven to 375 degrees F.
Add the cauliflower florets to a large roasting pan. Drizzle with olive oil and melted butter—season with sea salt, black pepper, and curry powder. Toss to combine and roast for 20 minutes.
Remove from oven, toss, and return to oven for another 20 minutes or until the cauliflower is tender.
Plate and top with fresh chopped cilantro.
