Roasted Curry Cauliflower

Ingredients

  • 1 Large head of cauliflower, cleaned and chopped into florets
  • 3 tbsp olive oil
  • 2 tbsp butter, melted
  • 1 tbsp curry powder (use your favorite)
  • ½ tsp Sea salt
  • Black pepper to taste
Garnish
  • Chopped cilantro

Instructions

  • Preheat oven to 375 degrees F.
  • Add the cauliflower florets to a large roasting pan. Drizzle with olive oil and melted butter—season with sea salt, black pepper, and curry powder. Toss to combine and roast for 20 minutes. 
  • Remove from oven, toss, and return to oven for another 20 minutes or until the cauliflower is tender. 
  • Plate and top with fresh chopped cilantro. 
  • *Our cilantro lime-infused oil goes perfectly with the curry cauliflower, too.
